In this episode, Kevin brings his pursuit of heat from farm to table, nose to tail. He kicks off his journey with a visit to a MasterChef top finalist based in Singapore with a gift of herbs harvested from his own farm - who in return whips up a modern rendition of a traditional Javanese dish that has a spicy kick to warm up his palate. Kevin then travels up north - deep into a jungle in Kuala Lumpur - to a traditional Malay village that is home to the Orang Asli, or the indigenous people of the Malaysian Peninsula. In this village, Kevin gets to taste the exotic heat of a wild plant harvested from the land itself - in the spirit of the Orang Asli having to rely solely on wild forest plants to season their food in the past. Kevin then heads to Malacca, where he meets a celebrity chef who is an expert in recreating dishes inspired by the royal banquets of the Malacca Sultanate. In this episode, Kevin goes back in time to explore how heat can help to preserve some of the most precious culinary traditions from generations past. His first stop – Perak, a haven for authentic Malay cuisine with a rich history and legacy. Kevin visits a local family-run restaurant that is considered to be one of the most authentic local Malay restaurants in the area. Here, Kevin is introduced to a special plant that may not be a spice, but it generates heat in a very special way that is particularly beneficial for women after childbirth. Next, Kevin heads to Ipoh, where most of the Chinese population are Cantonese like him. He gets invited to a traditional Cantonese eatery that has one particularly iconic dish on its menu – Majie Curry Noodles, aptly named as a tribute to the female migrant worker who invented the dish. In this episode, Kevin lands in southern Thailand - a region known for some of the spiciest dishes in the country. Will he be able to handle the heat in the land of smiles? His first stop – Songkhla Old Town, a historic port area in the far south of Thailand near the Malaysian border - where flavours are extremely bold and fiery with a mix of influences from Indian, Javanese and other cultures across the Malaysian border and Thailand. Here, he meets a local culinary enthusiast who is excited to whip up a dish that has been voted by netizens to be the worst dish in the world – fermented fish innards curry. He heads off next to the border town of Hat Yai, where many of the people are Muslims who speak Thai and Malay. He gets invited to a hearty family dinner where his ability to handle spice is tested through a Thai version of sambal. In this episode, Kevin goes on a wild road trip through Isan - the largest region in Thailand that is also home to one third of the country’s population with a truly diverse range of culinary preferences. Kevin’s first stop is a traditional salt farm about an hour’s drive away from town. The entire region used to be below sea level - hence an abundance of salt deposits that led to many salt farms being set up here. Besides heat and sourness, Kevin learns that salt is the third main flavour of Isan - hence its reputation for fermented dishes. He meets a local five-star Michelin chef who prepares two signature Isan dishes using a special fermented fish. Next, Kevin winds up in Chaiyaphum to meet a cultural ambassador and local podcaster who invites him to help her prepare a special spicy dish that will play an important role during one of the most impressive festivals he has ever seen in Thailand.
